Apple Bread Pudding w/Vanilla Sauce

Bread Pudding
4 c. soft whole wheat or white bread cubes
2 c. thinly sliced peeled apples
1/4 c. raisins
1 c. packed brown sugar
1 3/4 c milk
1/4 c. margarine or butter
1 tsp. cinnamon
1 tsp. vanilla
2 eggs

Heat oven to 350 degrees. Grease 10x6" baking dish. In a large bowl, combine bread, apples, & raisins. In small saucepan, combine brown sugar, milk & margarine. Cook over med. heat untill margarine is melted: pour over bread mixture in the bowl. Let stand for 10 min.
Stir in cinnamon, 1/2 vanilla & eggs. Pour into greased dish. Bake at 350 degrees for 40 to 50 minutes.

Vanilla Sauce;
1/2 c. sugar
1/2 c. packed brown sugar
1/2 c. whipping cream
1/2 c. margarine or butter
1 tsp. vanilla

In a small saucepan , combine the sugar, brown sugar, whipping cream, & margarine. Cook over med. heat untill mixture boils, stirring occasionally. Stir in the vanilla. Serve warm sauce over pudding. Store any remaining bread pudding in refrigerator.
