This is my favorite cookie all year, but especially for cold, snowy holidays. It's wonderful with tea. Makes the whole house smell divine! Best of all , no cholesterol! 40 calories per cookie.1.2 grams fat.

1 1/3 c flour
1tsp baking soda
1/2 tsp cinnamon
1/2tsp ginger
1/4tsp ground cloves
1/4 tsp salt
1/2 cup firmly packed brown sugar
1/4 cup softened unsalted butter
1/4 cup molasses
1 large egg white
1/4 cup granulated sugar (preferable demarara)
Combine the dry ingredients in a bowl, mixing well. Set asice. Put remaining ingredients, except for the granulated sugar, into food processor, and process until blended, scraping sides of bowl once. Add dry ingredients gradually. Gently press mixture into a ball; wrap in saran. Chill 2 hours.
Preheat oven to 375F.
Shape dough into 40 (3/4 inch) balls. Place granulated sugar in a shallow bowl.
Dip balls in cold water; shake to remove excess water. Roll in sugar. Place 3 inches apart on paper-covered cookie sheets. Bake @375 for 10 minutes. Remove from pan and cool cookies on wire racks.
