Vegetarian Chocolate Cake

I use this for birthday cakes , super moist and delicious!

2 ½ c unbleached white flour

2/3 c unsweetened cocoa powder

2 cups sugar, (I use 1 ½)

2 tsp baking soda.

½ tsp salt

6 tbl vegetable oil

2 ¼ plus 2 tbl water

1 tsp vanilla

2 tbl cider vinegar

In a large bowl, whisk dry ingredients, In a separate bowl, combine liquid mixture.. Stir the liquid into the dry and only til blended. Preheat oven to 375, grease and flour pan. I use standard layer cake pans.. Cook 20-25 min til cake tests done.. Cook in pan 10 min, cool to rack.. frost… I use cream cheese frosting.. but does come with a frosting recipe if you like.


1 1/3 cup unsweetened cocoa powder, sifted

1 ½ cups sugar

2/3 c cornstarch

2 c plain lite soy milk or skim milk

½ tsp vanilla

In a medium saucepan, whisk cocoa and sugar. In bowl, combine cornstarch and milk until no lumps. Whisk in corn starch mix into cocoa mix, cook over med heat stirring constantly, scraping bottom and sides with rubber spatula until glossy, about 7 min. Remove from heat and add vanilla. Beat to remove any lumps strain through fine sieve if necessary. Cool completely, stirring occasionally. When cakes are cool, spread with icing.. (this is why I use canned cream cheese frosting!)
